Halloumi cheese has been the traditional Cyprus cheese and for many years is being used especially in spaghetti, salads, pies, sandwiches, food, grilled and in a thousand other ways.

The ingredients that make halloumi cheese stand out of its competition are the goat’s and sheep’s milk, the salt, the rennet and the mint that give it its wonderful characteristic aroma.

But where does halloumi come from and which is its history?

The first reports of halloumi date back to around 1730, when travelers discovered a local cheese in the Damascus area that bore a striking resemblance to today’s halloumi.

The Cypriots traditionally preferred the halloumi cheese that was made from goat’s and sheep’s milk, but in areas where there were no sheeps, they made them only with goat’s milk.

The milk that they produced was either being sold or made into halloumi, while those people who did not have a large amount of milk made halloumi using the milk from other families.

Another characteristic is that the excess milk was being used to make local pasta during the summer months to ensure that the family would have food all the year.
